Something smells good!!

Hey guys! This is Amanda, and proud team member of Scrap-n-a-Snap Designs - the go to place for those must have scrapping templates! Well Today is Tuesday, and Tuesday's I will be mixing it up a bit - whether id be posting about a seasonal tip, household tip, recipe, or anything else I can come up with!. Be sure to check in because you never know what you will be reading ;) So let's get to it!! -- Today I have for you gals this great recipe I just threw together on Mothers Day. It was just me and my 16 month old son all alone that day, I got a lot done... Some much needed cleaning (lol), baked some yummy strawberry cupcakes, and then I cooked myself this delicious dinner!! So here it is... :)

Sesame Ginger Stir-fry with Salmon:

Ingredients:
2 Salmon steaks (with the skin on the bottom because we are grilling tonight!!)
1 Bottle of Sesame Ginger marinade (Any brand will do!)
Garlic (2 cloves crushed for the salmon-- 3 cloves finely chopped for the stir-fry)
3 Whole Carrots sliced (Or more or less, depending on you!!)
1 Package of sliced Mushrooms
Frozen or fresh Snow peas or Sugar Snap Peas (YUM)
1 Chopped Onion
ANY OTHER VEGGIES YOU WISH TO ADD!! GET CREATIVE :D
Salt
Soy Sauce
Rice (White or Brown)


Directions:
First we are going to be marinating the Salmon for a bit. Take a big bowl or a large zip-lock bag, place the Salmon steaks in them, along with the 2 crushed cloves of garlic and some of the Sesame Ginger marinade. Put it in the fridge and let it sit while you prepare the rest! If you would like, do this even earlier so it sits longer :D

Next we are going to work on the stir-fry! add some olive oil to a large pot/pan. Saute the sliced carrots first until they are slightly golden, add the chopped onions and sliced mushrooms next and cook together until softened. Next we are going to add the snow peas/ sugar snap peas. ( If need be add a little water to prevent anything from burning!!) When all the veggies are in and ready add the Sesame Ginger marinade with a splash of Soy sauce... Don't salt the stir-fry. Let the whole thing simmer for a while :)

Go ahead and cook your rice in the rice cooker or however else you go about doing it :D

Now for the Salmon! Get the grill fired up and prepped. Place the salmon on the grill on its side with the skin on it keeps it together and prevents it from breaking apart and falling into the grill. salt the top of each steak and grill away! Add marinade while grilling if needed or wanted of course :D

And then you have this!!!


So far it's been a hit! Hope that continues :D
