Roasted Vegetable Quesadillas!

Hey guys! Amanda here XD With what else?? Your weekly dose of this and that of course!! Well i thought id keep it simple and delicious today :) Check out this yummy recipe that's so simple to make!!

Roasted Vegetable Quesadillas Recipe
Roasted Vegetable Quesadillas!

Ingredients

1 medium onion, chopped1 medium zucchini, chopped1 medium sweet red pepper, chopped1 cup frozen corn, thawed1 tablespoon olive oil1/2 teaspoon ground cumin4 tomato flour tortillas (10 inches)1 cup (4 ounces) shredded Mexican cheese blendGuacamole, sour cream, salsa and sliced ripe olives, optional

Directions

In a large bowl, combine the vegetables, oil and cumin; toss to coat. Arrange in a single layer in an ungreased 15-in. x 10-in. x 1-in. baking pan. Bake, uncovered, at 425° for 10-15 minutes or until tender. Reduce heat to 350°

Divide vegetable mixture evenly between two tortillas. Sprinkle with cheese. Top with remaining tortillas. Place on an ungreased baking sheet; bake for 8-10 minutes or until cheese is melted.

Cut each quesadilla into six wedges. Garnish with guacamole, sour cream, salsa and olives if desired. Yield: 1 dozen.

S'mores Bark!

Hey guys! Amanda here, well who else would be bringing you your weekly dose of this and that! :D Hows everyone enjoying the Fall! I know I am :) Some of us may be enjoying the outside weather, when it's not raining at least! I know that I love to sit outside on a nice cool night with a fire going! Haven't been able to do so since I had the little one, but once he is old enough to know the safety rules I will be having plenty of fires with him! But today's this and that post can be for indoor non fire activities as well! Here's a little quick and easy recipe I got from pinterest! -- Note this is to make in the kitchen! But you can enjoy them outside during a warm fire!

S'mores Bark!


S'mores Bark - Lay out Graham crackers for the crust. Spread mini marshmallows, pour melted chocolate on it, let it cool. And Voila! S'mores bark.

It's as simple as this.. 
Lay out Graham crackers for crust..
Spread mini marshmallows over crust..
Pour melted chocolate all over..
Let cool..
ENJOY!!!

Pencil Cookies!!

Hey scrappers! It's Amanda!! I'm back for Wednesday's This & That post! I've missed ya'll :D Hope you've missed me, because I am back with a fun yummy back to school treat! Are you ready to get back to school or get those kiddo's back!? I know I'm not, I start my classes on the 9th, but I am almost done and will be getting my Teaching Assistant Certificate and then my Associates will be accomplished the following semester! So I am pretty stoked about that :D Anywho, I was doing a little browsing on Pinterest and came across this neat "Back to School" treat you can do with the kids, to have at home or to bring to school!

These are Pencil Cookies!
my mom and I make these fun pencil cookies before every school year as a little "back to school" treat. they are homemade sugar cookies cut into pencil shapes. the tip is dipped in melted chocolate to mimic lead, the eraser is made of fruit rollups, and the icing is homemade!! we even add a little sparkle to resemble the metal eraser clasp :)

They are simple sugar cookies cut into pencil shapes, the pinner on Pinterest said that she dipped the tip of the pencil in melted chocolate to imitate lead, she used yellow icing for the pencil and fruit rollups to mimic the other end of the pencil where the eraser is! Neat right!? When my son starts school in a few years I will definitely be doing this with him!!

Summer Sweets!

Hey there! It's me! Amanda! Back again with another lovely treat for you :) This time it's actually edible! Well after you make it it will be :D I have for you gals a easy Blackberry Cobbler recipe! Just look how yummy it is!!

Easy Blackberry Cobbler Recipe

SO HERE WE GO!! WRITE THIS DOWN!!

Ingredients:
4 cups fresh blackberries
1 tablespoon lemon juice
1 large egg
1 cup sugar
1 cup all-purpose flour
6 tablespoons butter, melted
whipped cream (optional)
Garnish: fresh mint sprig

Preperation:
  1. Preheat oven to 375°. Place blackberries in a lightly greased 8-inch square baking dish; sprinkle with lemon juice. Stir together egg, sugar, and flour in a medium bowl until mixture resembles coarse meal. Sprinkle over fruit. Drizzle melted butter over topping. Bake at 375° for 35 minutes or until lightly browned and bubbly. Let stand 10 minutes. Serve warm with whipped cream, if desired. Garnish with fresh mint sprig, if desired.
  2. For a neat presentation, bake for the same amount of time in 6 (8-oz.) ramekins on an aluminum foil-lined baking sheet.
