Roasted Vegetable Quesadillas!

Hey guys! Amanda here XD With what else?? Your weekly dose of this and that of course!! Well i thought id keep it simple and delicious today :) Check out this yummy recipe that's so simple to make!!

Roasted Vegetable Quesadillas!

Ingredients

1 medium onion, chopped1 medium zucchini, chopped1 medium sweet red pepper, chopped1 cup frozen corn, thawed1 tablespoon olive oil1/2 teaspoon ground cumin4 tomato flour tortillas (10 inches)1 cup (4 ounces) shredded Mexican cheese blendGuacamole, sour cream, salsa and sliced ripe olives, optional

Directions

In a large bowl, combine the vegetables, oil and cumin; toss to coat. Arrange in a single layer in an ungreased 15-in. x 10-in. x 1-in. baking pan. Bake, uncovered, at 425° for 10-15 minutes or until tender. Reduce heat to 350°

Divide vegetable mixture evenly between two tortillas. Sprinkle with cheese. Top with remaining tortillas. Place on an ungreased baking sheet; bake for 8-10 minutes or until cheese is melted.

Cut each quesadilla into six wedges. Garnish with guacamole, sour cream, salsa and olives if desired. Yield: 1 dozen.

Hey, Amanda here!! With you weekly dose of this & that! So Halloween's coming up! Gotta prepare!! Did you run to the store yet to grab all the candy you need for the kiddos!? Well here's an idea.. for those who don't want to give candy to kids, and rather them have something a bit healthier (yeah i know, candy's better!! but you never know..Lol)

Take anything that's SEALED of course!! And go ahead and tirck or treat them out! See how in this photo the fruit cups have pumpkin faces drawn on them? Neat right? Just an idea!! You can get so creative with these!! :)

Bake Off

Tutorials

Originally, I planned on writing a tutorial every week for the blog, but the designers at Brownie Scraps got together and came up with a better idea! I am still working on the details, but I will tell you I will be hosting an event in the Brownie Scraps  forum  in August that will include 3 mini workshops, a chat, games, & fun prizes! As soon as the details are worked out, I'll post here, so keep an eye for it.
